Blogmas Day 6: Time to Bake: Pistachio Cake


Hey everyone so if you didn't know i'm going to be starting to do the odd baking post to mix things up a bit and today I'm sharing with you my Pistachio Cake recipe. I love pistachio's in general and I love cake so what a great combo!


Ingredients for the cake:
220g unsalted butter
220g caster sugar
4 eggs
250g self raising flour
1 tsp baking powder
100ml milk
50g chopped pistachios 
50 white chocolate buttons

Ingredients for the icing:
150g White chocolate
150g unsalted butter
150g icing sugar
2 drops of Vanilla extract
handful of pistachios 

Method for the cake:
  1. Preheat the oven to 180 degrees
  2. Butter and line two 8 inch cake tins
  3. Cream together the butter and sugar until smooth
  4. Add the eggs gradually 
  5. Add flour and baking powder
  6. Whisk for 1 minute until light and creamy
  7. Fold in the pistachios and white chocolate
  8. Divide the mixture between the two cake tins
  9. Bake for 30 minutes or until a skewer comes out clean
  10. Leave to cool on a wire rack
Method for the icing:
  1. Melt the chocolate
  2. Cream together the butter and icing sugar until smooth
  3. Add the chocolate and vanilla- mix well
  4. Spread half of the buttercream on one cake then place the 2nd cake on top then spread the rest of the icing on top 
  5. Sprinkle a handful of pistachio over the icing and any leftover chocolate buttons
