Blogmas Day 1Time to Bake: Oreo Cupcake Recipe



For today's blogmas post I thought I would kick it off with a baking post! I've got back into my baking and thought I would share what i've been baking with you guys! If you never saw my M&M, Peanut Butter and Pretzel cookie recipe then have a look here. But today i'm sharing with you Oreo Cupcakes!


Cupcake Ingredients:
  • 175g unsalted butter
  • 165g caster sugar
  • 3 eggs
  • 40g cocoa powder
  • 125g self raising flour
  • 1tsp of baking powder
  • 1 pack of ore's
Frosting Ingredients:
  • 2 packs of oreo's
  • 100g butter
  • 200g icing sugar
Cupcake Method:
  1. Preheat oven to 180 degrees and put cupcake cases into your cupcake tins
  2. Cream together the butter and sugar until the mixture is creamy and smooth
  3. Crack one egg one at a time into the mixture, if it starts to curdle just add a teaspoon of the flour into the mixture
  4. Then fold in the cocoa powder, flour and baking powder
  5. Pop an oreo into the bottom of each cupcake cases- this gives the cupcake a nice little touch and texture
  6. Fill the cupcake cases with the batter which covers the oreo we put at the bottom of the cases.
  7. Bake them in the oven for 14-17 minutes
WASHING TIME

Frosting Method:

  1. Cream together your butter and icing which will make a smooth buttercream
  2. Take one pack of the oreo's and blitz them into crumbs, you can either use a food processor or a  place the oreos in a freezer bag and using a rolling bin bang them until they are crushed (make sure the bag is zipped of course)
  3. Strip the oreo crumbs into the buttercream and there you have it oreo frosting

Last but not least when your cupcakes have completely cooled down, spoon on the frosting, then place a whole oreo on top of the frosting.
