Let's Cook: Mac & Cheese

Time for another food post but this time we are on savoury and mac and cheese, now personally I can't eat cheese but I had to make this recipe for a cooking exam once and I practiced on my mum and dad and they loved it and always rave about it, so when my parents were away I made it for my other half and he loved it too so I thought I would share my recipe with you guys.

2 Tbsp of butter
350g macaroni pasta
1 garlic clove finely chopped
1 tsp mustard powder
3 tbsp of plain flour
500ml milk
250g cheddar
then a handful of cheese of your choice

1. Boil the pasta for roughly 2 minutes and heat oven to 200C/fan 180C/gas 6
2. Melt the butter in a saucepan
3. Add the garlic and mustard and cook for 1 minute
4. Stir in the flour then cook for another 1 minute
5. Gradually whisk in the milk until you have a lump- free sauce
6. Simmer for 5 minutes whisking constantly until the mixture has thickened
7. Take off the heat, then stir in all of the cheddar
8. Drain the pasta and stir the pasta into the cheese mixture, season the sauce too
9. tip into a large ovenproof dish 
10. Scatter over the cheese of your choice, then bake for 20 minutes until crisp and golden.
This can be frozen too but defrost thoroughly before cooking.
